bitnami's containers have gone closed source, rendering their helm chart not as useful and less FOSS overall

We should replace the optional bitnami postgresql sub-chart with and optional cloud native postgresql cluster sub-chart.

Describe alternatives you've considered.

just not including a database chart, but this feels mean :[
