Replace bitnami Postgres and Valkey subcharts with CNPG Cluster and official Valkey subcharts #27

Major database update

You can enable or disable the built-in CNPG Cluster subchart by toggling cnpg.enabled.

Major redis update

We're no longer using the bitnami redis subchart and are now using the official valkey helm as a subchart. Valkey is a fork of redis.

We also revamped the way you pass in additional valkeys/redises for sidekiq and cache to be under the externalValkey values like so:
